Since am quite new to this fishing thing can someone tell me more about why you choose the groundbait you do. I have read more that once on this site regarding the colour of groundbait in relation to the colour or depth of the water? Are there some basic rules you would go by?

It depends what species you're targetting or are the most prevelant at the place you're fishing.
If there are Bream about, the sweeter the mix the better. I've found that red active groundbait works very well on some waters, while brown inactive groundbait works well on others - I will usually add sweet molasses to the mix in either case, along with loose feed such as hemp, casters, chopped worm and corn - the latter especially in summer.
Another additive worth considering (particularly if using chopped worm is VDE 'Liquid Worm' which is a powerful attractant for Bream and hybrids, especially in conjunction with crushed hemp.
Roach also respond well to a similar mix as above - but without the sweet additives - another killer groundbait is mashed or liquidised bread and big punch or squatt as hookbait, varying to pinkie or caster,
